Morogo (Braised Wild Indigenous Greens)
Nutritious wild indigenous greens braised slowly with sweet onions, rich tomatoes, garlic, and crushed roasted peanuts.
The story
Morogo (or imifino in Nguni languages) refers to a collective variety of wild-harvested dark leafy greens, such as amaranth and cleome, revered across Pedi, Tswana, and Sotho homelands. Prepared as a daily essential side dish to accompany stiff maize meal pap, it provides vital minerals and earthy complexity to simple rural meals. Traditional cooks often incorporate crushed raw or roasted groundnuts toward the end of braising to balance the natural oxalic bitterness of wild foraged leaves.
