The story

During the wet spring and summer, women forage tender wild greens such as pigweed (*thepe*) and wild mustard (*seruoe*), which are lightly blanched, pressed into tight disks or sheets, and dehydrated under the intense African sun. Cooking these rehydrated leaves requires meticulous washing to remove all highland windblown dust followed by a low braise to unlock their concentrated herbaceous minerals.
