The story

Hailing from the lush slopes of Mount Kilimanjaro, Mtori is the ancestral culinary staple of the Chagga people. Traditionally prepared as a nourishing breakfast and fed to nursing mothers during postpartum seclusion, it is revered for its restorative and digestive properties. Historically, the soup is mashed with a traditional wooden stick called a 'mwaiko' until the starch in green matoke bananas completely gelatinizes with the bone marrow fat, creating an emulsion without any added flour or dairy cream.
