The story
Mukeke (Luciolates stappersii) is endemic to the deep, oligotrophic waters of Lake Tanganyika and serves as the crown jewel of Burundian coastal cuisine, especially along the shores of Bujumbura and Rumonge. Traditionally eaten during festive evening gatherings, fishermen and open-air restorers grill the whole fish over intense acacia charcoal braziers. A technical detail crucial to this dish is scoring the dense, lean flesh deeply to allow the citrus marinade to denature the surface protein, which prevents the delicate skin from tearing on the iron grates.
