The story

In the lowveld valleys of Zimbabwe, among the Shangaan, Tonga, and Karanga peoples, the late summer dropping of golden marula fruits marks the arrival of the sacred Mukumbi season. Gathered exclusively from the ground once naturally ripened, the fruits are pressed collectively by women using cow horn tips or wooden skewers to pierce the leathery rind. Technically, marula juice is extraordinarily rich in vitamin C and wild ambient yeasts, which initiate rapid, vigorous anaerobic fermentation without needing any added commercial pitching culture.
