The story
Mulah Miris is a cornerstone of the pastoral Baggara and nomadic tribes across Darfur and Southern Kordofan, served at communal evening meals to sustain pastoralists through dry seasons. The stew gets its unmistakable umami and musky profile from miris, an artisanal condiment made by fermenting rendered sheep tail fat and bones with fenugreek in terracotta pots buried underground.
