The story

Mulah Ni'aimiya is the jewel of festive tables across central and northern Sudan, ubiquitous during Eid al-Fitr and wedding feasts where it cloaks towering mounds of sorghum asida. The stew relies on sharmout (finely pounded sun-dried meat) and waika (powdered dried okra) to achieve its hallmark velvety, elastic consistency. Historically, the addition of smooth roasted peanut paste balances the sharp lactic acidity of fermented milk (laban rayeb), producing a luxurious surface sheen known locally as the 'wish'.
