The story
Deeply entrenched in the cultural life of the Tonga and Lenje peoples of Central and Southern Zambia, munkoyo is brewed in large clay pots for weddings, harvest ceremonies, and coming-of-age rituals. Served either freshly brewed as a sweet non-alcoholic nectar or after two days of souring when lactic acid develops, it provides continuous hydration under the sun. The botanical secret lies in the fibrous roots of the Rhynchosia tree, which release beta-amylase enzymes that rapidly saccharify thick cooked cornstarch into fermentable maltose sugars without relying on malted grain.
