The story

Traditional to the agricultural riverine communities along the Shabelle and Jubba rivers and Benadiri coastal households, muufo is the quintessential vessel for moqmad and rich tomato-based maraq stews. It is prepared daily for evening meals or hearty family breakfasts throughout southern Somalia. Unlike modern wheat flatbreads, authentic muufo relies on a brief lactic fermentation of coarse white maize, which historically imparted sour notes that balanced the radiant heat of subterranean clay tinnur ovens.
