The story

Across agrarian villages in Malawi, Ngowe is prepared daily during the wet summer weeding periods when young cowpea foliage is thinned from the fields. It serves as a rapid, revitalising midday or evening relish that fuels hard physical farming labour with vital iron and vitamins. Village cooks know that mature cowpea leaves contain tough fibres, so the young shoots must be destemmed by hand and tenderised quickly with a pinch of potash or gently folded in ripe tomato acid at just the right stage.
