The story

Among the cattle-herding Ngoni and Tumbuka people of northern and central Malawi, Chambiko is an ancestral staple drink consumed alongside warm nsima or simply enjoyed chilled during the heat of midday. Traditionally, fresh cow's milk was fermented inside hollowed calabashes or specialized clay pots seasoned with residual native cultures over generations. Chemically, the sustained slow fermentation by wild lactic acid bacteria converts lactose into lactic acid, providing essential preservation in hot climates and creating a thick, easily digestible curd.
