The story

Nkhwani Otendera is an indispensable vegetable relish among the Chewa and Ngoni peoples of central and southern Malawi, served daily beside steaming mounds of nsima. Traditionally harvested at dawn when young shoots are softest, stripping the fibrous outer strings from each leaf stem is considered an essential rite of preparation. A critical culinary detail is that raw groundnut powder must never boil vigorously without gentle stirring, or the natural peanut lipids will separate and break the delicate emulsion.
