The story

Across central and southern Malawi, particularly among Chewa, Mang'anja, and Lomwe households, Nsinjiro forms the savory backbone of everyday culinary life. It is stirred liberally into boiled indigenous leaves like mphangwe (amaranth) and nkhwani (pumpkin leaves) or into bean stews to transform plain greens into hearty, satisfying relishes (ndiwo). Traditional cooks pound the roasted nuts rhythmically in a wooden mtondo (mortar) while still warm, carefully stopping before the friction releases excess oil and turns the dry powder into a paste.
