Oluwombo lwa Nkoko (Ugandan Royal Banana Leaf Braised Chicken)
Heritage Ugandan royal chicken stew gently steam-braised inside smoked banana leaves with tomatoes, mushrooms, and aromatics.
The story
Created in 1887 by chef Kawuma for Kabaka Mwanga II of the Buganda Kingdom, Oluwombo is Uganda's ultimate culinary showpiece for traditional introductions (Kwanjula) and festive feasts. The magic of the dish lies in wrapping marinated free-range chicken and wild mushrooms inside heat-softened banana leaves, preserving every drop of aromatic vapor and infusing the meat with an earthy, tea-like scent.
