Papa le Moroho (Basotho Maize Porridge with Braised Mountain Greens)
Stiff white mountain maize pap served alongside braised bitter greens infused with spring onions and tomato.
The story
Sustaining shepherds across the rugged, high-altitude Maloti Mountains of Lesotho, Papa le Moroho is the daily lifeblood of the Basotho nation. Traditionally, wild-foraged mountain greens known collectively as moroho are gathered from the hillsides and gently stewed to balance the dense, comforting mound of coarse white maize porridge.
