The story

Originating in the chilly highlands of Lesotho, Sechu sa Khomo is a communal soup prepared during large village pitso gatherings and frosty winter celebrations. Families traditionally slaughter a mature ox, utilizing every rich cut and marrow bone to fortify the broth against sub-zero mountain winds. Unlike contemporary stews thickened with flour, true Basotho sechu achieves its luxurious, glossy mouthfeel solely through the long extraction of collagen from native cattle bones.
