The story
Poto-Poto ti Ngozo (closely related to the riverine chikwangue) has sustained Ubangi River traders, fishermen, and Yakoma boatmen across Central Africa for centuries. Traditionally produced by fermenting cassava tubers submerged in slow-moving streams for several days, the paste undergoes an essential pre-gelatinization step over fire before packaging. Wrapping the loaves tightly in thick waxy forest leaves creates an airtight anaerobic seal that keeps the cooked loaves shelf-stable for weeks in tropical heat.
