The story
Originating from the creolized culinary exchange between Portuguese colonial dessert-making and West African coconut cultivation across Santiago and São Vicente, Pudim de Coco is the undisputed centerpiece of Cape Verdean baptisms, weddings, and Christmas feasts. Unlike European egg flans baked in dry ovens, island cooks traditionally steam the custard on the stovetop inside a clamped tin called a pudinzeira submerged in a water bath. This gentle, humid steaming prevents the coconut shreds from drying out, allowing them to rise naturally to create a textured, chewy macaroon-like crust at the base while preserving a silken interior.
