The story

A staple among pastoralist communities throughout central Mudug and northern Somaliland, Qamadi is traditionally prepared at dawn to sustain herders through long days of grazing livestock. Served steaming in shallow wooden bowls, it reflects the pastoral reliance on dairy and hardy grains traded via historical caravan routes. A technical secret of nomadic cooks is dry-toasting the cracked wheat in cast-iron pots before liquid is introduced, which gelatinizes surface starches and prevents the porridge from becoming gluey.
