The story
Salade de Palmiste, historically known as the salad of millionaires, is an esteemed Franco-Mauritian delicacy served at formal banquets and holiday family lunches. Harvested from the core of the endemic royal palm or peach palm, it was traditionally an extreme luxury because cutting the heart required felling the entire mature tree. To preserve its pale color and crisp, sweet nutty texture, the freshly cut palm ribbons must be bathed immediately in acidulated ice water.
