The story

Along the coastal villages of Mauritius and Rodrigues Island, ourite (octopus) is traditionally caught in shallow lagoons during low tide by free-diving fishers using wooden spears. Salade Ourite is the definitive centerpiece appetizer for Sunday family beach picnics and seaside Creole feasts. To ensure the meat turns meltingly tender rather than rubbery, cooks poach the octopus slowly with whole aromatics and plunge it briefly into hot water before full immersion.
