The story

Originating among the central Akan peoples such as the Baoulé and Agni of Côte d'Ivoire, Sauce Djoumgblé is a staple prepared predominantly during the dry season when fresh pods are out of season. It is traditionally served during family gatherings and ceremonies alongside smooth foutou banane or pounded yam. The sun-drying and stone-grinding process of okra pods caramelizes residual sugars and concentrates mucilage, yielding a distinct earthy, woodland aroma and dark hue unattainable with fresh okra.
