The story
Among the Bété and Guro peoples of west-central Côte d'Ivoire, N'tro is the undisputed crown of ceremonial banquets, served to honour dignitaries, elders, and new in-laws. Traditionally simmered in earthenware pots over slow embers, the dish relies on ground toasted Citrullus melon seeds rather than raw egusi paste. Culinary historians note that the distinct binding technique—whipping the melon paste with scalding stock before dropping it into the pot—creates resilient, tender seed-dumplings that absorb the complex woodsmoke of game meat without collapsing into the gravy.
