The story

Native to coastal fishermen in Alexandria, Port Said, and Suez, Sayadeya is Egypt's quintessential seaside Friday family lunch. Rooted in the seafaring culture of the Mediterranean and Red Sea ports, it turned the catch of the day into a complete, aromatic one-pot feast. The foundational technique requires slowly frying finely minced onions past golden until they reach an intensely dark mahogany without burning, which yields the signature amber broth that flavors both fish and rice.
