The story
Shiro is arguably the most democratic and ubiquitous dish across Ethiopia, savored equally in modest rural households and bustling urban restaurants. Prepared from dried chickpeas or broad beans roasted and milled with fenugreek, cardamom, and chiles into 'shiro powder', the dish is traditionally cooked in a shallow earthenware pot called a mankeshkashta. When topped with extra spiced butter and sizzling hot, it is affectionately termed Shiro Tegabino.
