The story

Positioned at the strategic crossroads of the Red Sea and the Indian Ocean trade routes, Djibouti developed Skoudehkaris as a synthesis of Somali culinary foundations and Yemeni spice influences. Prepared traditionally in a single pot during Eid festivities and formal feasts, the dish relies on whole spices bloomed in ghee before long braising. The hallmark of an authentic Skoudehkaris is the gentle caramelization of the rice grains at the bottom of the pot, echoing Persian and Gulf pilaf traditions.
