The story
Among Shona and Ndebele communities, the goat head (musoro wembudzi) is an esteemed cut traditionally reserved for family elders following ceremonial events such as traditional weddings or bira ancestral gatherings. Eaten the morning after celebrations as a revitalizing broth, it is celebrated for replenishing strength and restoring vitality. The technical key lies in searing and singeing the head over open flame to caramelize the subcutaneous collagen before embarking on a slow, continuous extraction of marrow and gelatin.
