Chimudhumana (Steamed Fresh Sweetcorn Bread)
Tender, fragrant parcels of fresh green maize batter steamed inside corn husks, capturing the sweet essence of the early harvest.
The story
Prepared across rural Mashonaland and Manicaland during the green harvest (zhizha), Chimudhumana celebrates the very first sweet white maize of the season before the cobs dry out for storage milling. Traditionally served steaming hot at dawn alongside strong black tea, it provides hearty sustenance for families heading out to work in the communal fields. Authenticity relies entirely on using milky, immature dent corn whose high starch and moisture content naturally bind the batter without needing commercial raising agents or eggs.
