The story

Revered among Shona and Ndebele communities of Zimbabwe, Sadza reZviyo predates the introduction of white maize and remains the premier nourishment for labor-intensive work and traditional gatherings. While modern white sadza dominates urban tables, finger millet (zviyo or rukweza) is celebrated for its low glycemic index and high iron content. Technically, finger millet starches gelatinize at a slightly higher temperature than cornstarch, requiring an extended steaming period (kutukisa) beneath a tight lid to eliminate grittiness.
