The story

Across rural farming homesteads and bustling suburban kitchens in Zimbabwe, Mbambaira Yakabikwa forms the backbone of a classic Shona breakfast, traditionally served steaming alongside strong black tea (tii ine mukaka kana isina). Unlike the soft orange sweet potato varieties common in the West, traditional Zimbabwean varieties (mbambaira) are pale cream, dense, and naturally starchy with a mild chestnut-like sweetness. Cooking them skin-on traps the natural sugars and volatile aromatic compounds, while gentle steaming prevents waterlogging of the dense tuber flesh.
