Traditionally prepared over three-stone hearths, it bridges the gap between staple starch and sweet comfort through the caramelisation of natural vegetable sugars. A crucial technical element relies on vigorously whipping the hot mash with a traditional wooden whisk (musika or mugoti), which aerates the pumpkin fibers and prevents the rich peanut fats from splitting.
