The story

In Shona rural homesteads across Masvingo and Manicaland, manhimba is celebrated during the autumn harvest (mwaka wezvirimwa) as a wholesome evening sweetmeat. Prepared simply by steaming indigenous squash over vegetable trimmings or cobs, it allows the concentrated natural fructose of sun-cured pumpkins to shine. Historically, cooks lined heavy cast-iron three-legged pots (poto yechikweshe) with sweet sorghum leaves or stripped maize husks to elevate the flesh above simmering water, preventing waterlogging and creating gentle caramelisation at the rind.
