The story

Across the coastal coconut groves of Inhambane and Zambézia provinces, sura is harvested daily by skilled Chopi and Bitonga tappers from the crowns of wild coconut and lala palms. It is consumed fresh and sweet in the morning, or allowed to ferment naturally in calabashes for weddings, lobolo dowry ceremonies, and community harvests. Wild yeasts (Saccharomyces and Zymomonas mobilis) present naturally on tapping funnels start spontaneous fermentation within two hours, creating a drink that changes character by the hour.
