The story
Brewed nationwide in rural Eritrean highland villages, Suwa is central to holiday feasts, weddings, and communal agricultural labor parties known as wefera. While seemingly rustic, the depth comes from baking kitta or enkuro until deeply caramelized or charred to impart color and a signature roasted smoke note to the wort. The fermentation relies on wild microflora hosted natively on the sun-dried gesho (Rhamnus prinoides) leaves and stems, acting simultaneously as a bittering agent and microbial inoculant.
