The story
For the nomadic Tuareg (Kel Tamasheq) traversing the Saharan reaches of northern Mali, Taguella is the indispensable daily sustenance. Eaten during communal desert gatherings, the finished loaf is crumbled by hand into wooden bowls and saturated with rich goat stew or camel milk broth. Technically ingenious, baking directly inside hot sand insulated by acacia charcoal creates an ultra-rapid thermal crust that seals out grit completely while steaming the interior to a tender, dense crumb.
