The story
Tanbour is the legendary feast dish of the nomadic Arab, Toubou, and Gorane pastoralists inhabiting the northern Borkou-Ennedi-Tibesti deserts and central plains of Chad. Prepared exclusively for milestone events such as grand tribal weddings, reconciliation councils, and Eid al-Adha, it represents the highest honor a host can bestow upon traveling guests. Traditionally cooked in deep sand pits lined with acacia wood coals and sealed with clay, the meat roasts in its own rendered fat and aromatic vapor for hours until the connective tissue liquefies entirely.
