Distinct from South Asian biryanis, Swahili pilau is characterized by deeply caramelized onions that tint the rice a rich chestnut hue, combined with a signature dry-toasted spice blend of cumin, black pepper, cardamom, cinnamon, and cloves pounded fresh in a kinu (mortar).
