An earthy, sour Northern Togolese red sorghum beer brewed through triple decoction, wild lactic fermentation, and natural foaming fermentation.
The story
Indigenous to the Kabye, Batammariba, and Bassar people of northern Togo's Kara and Savanes regions, Tchoukoutou is an ancient, nutrient-dense beverage central to harvest rituals, communal farming, and funerary rites. Brewed exclusively by master women brewers (the tcho-tche), the drink is traditionally served lukewarm in dried calabash gourds (kollé). Unlike modern barley beers, Tchoukoutou undergoes a simultaneous wild lactic acid fermentation and yeast fermentation without hops, utilizing the mucilaginous stems of native wild okra plants to clarify the thick, boiling mash.
