The story
Among the Lomwe and Chewa peoples of southern and central Malawi, thelele is a revered daily accompaniment (ndiwo) to stiff white cornmeal porridge. Traditionally prepared during harvesting seasons, it is also served at everyday family lunches where viscous stews are prized for easing the swallowing of thick starches. Historically, village cooks filtered water through the burnt ash of dried bean pods or banana leaves (chidulo) to yield an alkaline base that preserves the vibrant chlorophyll and breaks down vegetable mucilage into an unbroken, velvet broth.
