Thiakry (Senegalese Sweet Millet Couscous and Yogurt Parfait)
Fluffy steamed millet couscous folded with sweet, tangy fermented yogurt, nutmeg, vanilla, and evaporated milk.
The story
Thiakry (also known as Dégué in neighboring nations) celebrates the ancient West African grain pearl millet (souna), naturally steamed and rolled into small pearls called arraw. Originating among pastoralist and agrarian communities who paired harvested grains with cultured milk, it has evolved into the quintessential dessert served at Senegalese Korité (Eid) feasts and baptism celebrations.
