The story

Deep in southern Mauritania's Guidimakha region along the Senegal River basin, Tiguedege is the quintessential midday feast of the Soninke people. Served traditionally over mounds of broken jasmine rice, it marks family gatherings and agricultural harvest celebrations. Unlike many Senegambian peanut stews that rely heavily on palm oil, classic Soninke Tiguedege relies purely on the natural oils rendered out of deeply roasted, stone-ground arachide paste to achieve its signature sheen.
