The story

Tishtar is an ancient Mauritanian preservation specialty developed by Moorish cattle and camel herders to safeguard precious surplus meat against Saharan heat. Historically packed into leather pouches for trans-Saharan caravans, it is traditionally reconstituted into broths or eaten shredded alongside couscous during tribal gatherings. A technical hallmark of tishtar is pounding the completely dehydrated meat in a heavy wooden mortar until the muscle fibers splinter into fluffy, floss-like strands that absorb spiced fat effortlessly.
