Trida is a revered culinary monument of Constantine and the ancient cities of Eastern Algeria, traditionally crafted for Mawlid, Eid, and grand family gatherings. The paper-thin semolina dough is rolled, cut into miniature squares, dried, and then subjected to multiple gentle steamings over the cooking meat stock in a couscoussier. The culinary brilliance lies in 'tajmar'—the final stage where the steamed pasta is simmered directly in the reduced strained sauce until completely infused.
