The story

Songhai and Tuareg cooks in northern Mali serve this elaborate stew for honored guests during festive gatherings along the Saharan trade corridors. The dish combines nomadic bread-making ingenuity with slow-simmered Saharan meat ragouts flavored with dates and dates of tamarind. A critical technical detail is setting the proofed dough directly into the steaming upper tier or directly upon the simmering sauce, allowing the bread to absorb aromatic vapors as it expands.
