The story
Among the emaSwati, Umcombotsi is central to cultural rituals, ancestral veneration (kuphahla), traditional weddings, and communal work parties known as lilima. Brewed in large clay vessels or cast-iron pots, the first gourd (inkhamba) is traditionally poured onto the ground as a libation to the ancestors before being passed among guests. The intricate three-day decoction mash harnesses both sprouted malt enzymes to saccharify maize starches and wild airborne lactic cultures to produce its distinct sour, opaque profile.
