The story
Rooted in the arid Lowveld savannas of Eswatini, umncweba was perfected by cattle-keeping Swati lineages as a preservation method during dry winter cattle slaughters. Unlike commercial South African biltong, traditional Swati umncweba is cut along the muscle grain into thinner ribbons and cured with a sharper vinegar-to-salt ratio suited for humid transition climates. The technical secret lies in lightly dry-toasting whole coriander seeds over wood embers before coarse grinding to release essential linalool oils without burning the spice.
