The story
Historically in the royal courts and traditional communities of central and southern Rwanda, Umutsima was an elite ritual dish prepared exclusively for weddings, harvest ceremonies, and noble gatherings. Unlike everyday white cassava or maize ugali, the inclusion of red sorghum imparts an earthy fragrance, distinct mineral complexity, and deep mahogany tone. The dish demands vigorous paddle agitation (gutsinda) during cooking, requiring great physical endurance to hydrate the starch granules evenly without scorching.
