The story

No Somali wedding (aroos), Eid celebration, or major festive gathering is complete without the presentation of authentic, glossy xalwo. Prepared across every Somali territory, master halwa makers (xalwo-karis) traditionally cooked this in massive copper cauldrons over charcoal embers for hours. Chemically, the confectionery demands strict temperature control to caramelize simple sucrose before combining it with a hydrated starch slurry and emulsifying substantial amounts of spiced subag until a distinctively elastic, jelly-like texture is achieved.
