The story

Xima is the fundamental daily nourishment and culinary cornerstone for central and southern Mozambican ethnic groups including the Sena, Ndau, Ronga, and Changana. Served at almost every lunch and dinner alongside vegetable relishes like matapa or rich meat stews, a meal is traditionally incomplete without this starch. Technically, achieving flawless lump-free Xima requires a critical two-stage cooking method: first boiling a thin slurry starter (mingau) before vigorously cutting in dry white cornmeal with a flat wooden paddle to develop structural elasticity.
