The story

Yeet is harvested exclusively along the rocky Senegalese Atlantic shelf by Lebou divers collecting large marine volute snails (Cymbium pepo). It is used sparingly across Senegal to build the deep, rustic flavor profile characteristic of Thiébou Yapp (meat rice) and C'est Bon. The historical processing method requires burying the raw gastropod flesh in coastal sand or clay vats for several days, converting the tough muscle protein into a pungent, dark seasoning block.
